At Konversion Fit we are always looking for ways to eat healthy while satisfying our taste buds! Check out this recipe below that can be cooked with your choice of protein. Our favorites are ground beef, ground bison and shrimp!
Step 1: Cut spaghetti squash in half
Step 2: Core spaghetti squash seeds with a spoon and toss in trash bin.
Step 3. Line a baking sheet with foil and place spaghetti squash halves “meat-side” down at 400 degrees for 20 minutes.
Step 4. When squash has cooled, flake out the “spaghetti” with a fork and set aside.
Step 5. Place cut vegetables (mushroom, zucchini, red pepper) in a skillet with a little coconut oil, onion, garlic, salt, pepper, parsley, thyme, and oregano. Cook veggies uncovered for around 5-7 minutes on medium-high heat.
Step 6. Add ground beef / bison or shrimp and continue to cook on medium-high heat until fully cooked.
Step 7. Add “spaghetti”
Step 8. Add sauce and simmer on low for 10-20 minutes.
Step 9. Place mixture into a cast iron skillet, top with a light sprinkle of parmesan cheese and broil for 5 minutes or until cheese is crispy.
Step 10. Add nutritional yeast and enjoy!
One of my favorite meals that I learned from you. I mix up the meat and veggies/spices depending on what I have. Never knew what to do with a spaghetti squash before; use it often.
